Pure Fruit Vegan Banana Vanilla Bean and Strawberry 'Gelato'
This pure fruit gelato is not only refreshing, it's guilt free! It's also surprisingly sophisticated, so I plan to serve this easy dessert at my next dinner party. There is no recipe and it takes less than five minutes to whiz the fruit after it's been frozen. All without an ice cream maker.
Just cut up fruit and freeze. (I froze the cut fruit between sheets of wax paper in a plastic container.)
While still frozen, whiz in a food processor with a drizzle of almond or coconut milk (about a tablespoon per cup of fruit). You can make extra, just keep the fruit frozen and whiz it just before you're ready to serve.
Optionally, you can scrape out the seeds of a vanilla bean and add it to the banana ice cream for banana-vanilla ice cream.
You really don’t need to add any sweetener because the fruit itself is sweet enough, but of course you can add a drizzle of maple syrup or coconut nectar to taste. I sprinkled a little raw coconut crystals to make it look like dessert, but you don't really need that either.
Bananas make for an exceptionally creamy ice cream and berries uncannily mimic sorbet. Or, mix any soft fruit with the frozen banana base!
