Upside Down Coconut Sugar Peach Cake

Summer peaches! They're delicious fresh just off the tree, but since they're at their peak, I love to buy a box of them and turn a few into cakes, smoothies, and other treats. The other day, I made a gluten and dairy free, coconut flour and coconut sugar sweetened upside down peach cake and it was so delicious. I love tall cakes, but decided to made this one short so there would be a good amount of fruit per cake slice. Baking with gluten free and coconut flours is tricky, but I hope you give it a try and like it!

Ingredients (makes one 24 cm diameter, approximately 4 cm deep cake)

  • 1/2 cup extra virgin cold pressed coconut oil  + 1 tbsp to pre-cook peaches
  • 3 medium organic ripe peaches, skins on, pitted, and cut into wedges
  • 1 cup organic gluten free flour (or spelt flour if you can tolerate a little gluten)
  • 1/2 cup organic coconut flour
  • 1 tsp baking powder
  • 1 tsp sea or Himalayan salt
  • 1 cup organic coconut cream
  • 2 medium organic eggs
  • 1/2 cup organic coconut sugar + 2 tbsp to caramelize peaches
  • 1/2 teaspoon pure vanilla extract or 1 vanilla bean, seeds scraped
  1. Preheat the oven to 175C.
  2. Coat the bottom of a round baking dish with 1 tbsp coconut oil and 2 tbsp coconut sugar.
  3. Arrange peaches in a circular pattern.
  4. Bake in the oven for 15 minutes until the sugar has slightly caramelized and the peaches have slightly softened.
  5. In a mixing bowl, sift the flours, baking powder, and salt together.
  6. In a separate mixing bowl, blend the coconut oil, coconut cream, eggs, sugar, and vanilla.
  7. Add the dry flour mixture to the wet mixture in 3 batches as you continue to mix.
  8. Carefully pour the cake batter onto the pre-cooked peaches in your baking dish.
  9. Bake for approximately another 30 minutes until a toothpick comes out of the cake clean.
  10. Remove from oven and allow to cool.
  11. Serve warm on its own or with a little vegan “nice cream” (my recipe here) or gelato.
